To learn more aboutItalian food, Gachon herald reporters visited the UNCLE PAUL cooking school in Hannam-dong at about 11 a.m. on Monday, October 8. All the cooking classes of UNCLE PAUL are held on reservation. And a minimum of two persons must make a reservation to open the class. It is a particularly good class for friends and couples because it is operated on a small scale. The menu always changes, and you can ask about a particular type of food that you want to learn in advance. Our reporters made our own risotto, pizza, and lemon tart. The ingredients were prepared in advance ofthe class.
Ingredients: brown rice, 1/4 onion, 1/4 stick of celery, 1 clove of garlic, 4~6 cherry tomatoes, 2 abalone, chicken stock, a small bunch of parsley, Parmesan cheese, a padof butter, 1/2 cup of white wine.
Soak the brown rice in water and chop the onion and celery as small as possible. Mash the garlic and cut the cherry tomatoes in half and dig out with a small tea spoon. After trimming the abalone, separate the intestines and flesh. And chop the flesh into small pieces. If it is difficult to cut the abalone, it is convenient to buy the prepared abalone.
Add 1 tea spoon of olive oil and butter in a preheated pan and stir-fry the abalone for 1~2 minute. And put the onion, celery, and garlic and boil for about 5 minutes, then add the brown rice. While frying the rice, add the white wine and evaporate the alcohol, then add the chicken stock and close the lid of the pot. When the rice is cooked, turn off the heat, add the parmesan cheese and butter. After waiting for about 5 minutes, a delicious abalone risotto is completed.
Ingredients: 1 cup of flour, 2tbsp of baking powder, 1/2 ball of mozzarella, small bunch of basil, Parmesan cheese.
Put flour, baking powder, a pinch of salt, a spoonful of olive oil, and 1/3 cup of water in a blender and grind them to make dough. Sprinkle flour on a cutting board and spread it thinly with a rolling pin. Prepare a mortar and pound garlic and basil in it and season it with salt and pepper.
Heat a frying pan, add some oil and put the half-folded dough on the pan. Then put the tomato sauce and mozzarella cheese on top of the dough and add salami to your taste. Lastly, spread parmesan cheese and olive oil. Check the bottom of the dough and see if it is cooked well by using a fork. If the dough is well-cooked, turn off the stove. Afterward, put it in the oven and it’s over.
Ingredients: 4 puff pastries, sugar powder, 50g of ricotta cheese, 1 lemon, 1 tbsp of sugar.
Sprinkle sugar powder on pastry, a kind of bread, and roll it up. Raise the pastry and press it with your palm. Then spread it thinly with a rolling pin and put it in a muffin pan. If you don’t have any muffin pan, you can use a cup. Afterward, bake it in a preheated oven for about 8 minutes.
Put ricotta cheese, egg water and sugar in a ball. Cut the lemon in half and sprinkle lemon juice on the ball. When you mix them well, the sticky cheese mix will be made. Remove the tart from the oven, fill the cheese and bake it in the oven for 8 to 10 minutes again.
‘Plating’ brings perfection to Italian cooking. Therefore, Gachon Herald reporters also set the table perfectly and had a good lunch.
